Hi Annual,
I usually do pretty well packing stuff for my daytime huger.  I do like to cook and often prepare more than we can eat and then freeze the rest.  I am VERY grateful that I like to cook.  I can’t imagine trying to do NT if I did not like to cook.

What I find I’m most challenged with now is having something ready to go when I get home from work around 5:00 p.m.  I’m usually hungry by then and have learned not to wait for my husband.  I did make up a bunch of burritos and put them in the freezer so those are quick.  I also like egg sandwiches a lot, but I want to try to keep variety in my meals. 

I’m finding my evening meal does not seem to consist of as many veges and they used to when I ate more at night.  But I also think I’m eating more veges earlier in the day so maybe I’m okay…

I’m usually hungry at 4 or 4:30 (sometimes 3) and I have fruit if that looks good to me, or leftovers (I usually make at least an extra portion or two), or cheese on toast, or peanut butter on toast, or trail mix with raisins, nuts and granola.  I never worry about spoiling my appetite for supper.  If I’m not hungry by suppertime I just wait.  But I usually am, in spite of my “snack.”

Also, I try to build my supper around vegetables, instead of around meat.  If I don’t fix stir-fry, I might make grilled eggplant and zuchinni and corn on the cob with a steak or chicken. Just fill your plate up with vegetables that you love!
